In Latin America, we have been doing everything possible to obtain recognition of several Appellations of Origin for some time, but we have not made much progress in the creation and operation of «Regulatory Councils». The regulation of Regulatory Councils is uneven worldwide. There are some positive experiences on Regulatory Councils that we want to highlight in this work because knowing the positive experiences of others can give us ideas to take off in this field.
